Darjeeling Lamb Cutlets Newcastle – A Raval Favourite

Inspired by Darjeeling, Cooked Over Fire

High in the foothills of the Himalayas, Darjeeling is known around the world for its tea gardens and distinctive landscape.

The famous tea-growing region provided the inspiration for the name of one of Raval’s long-standing dishes: Darjeeling Lamb Cutlets.

Grilled lamb cutlets are served over a base of curried potato, with ginger, coriander and warming spice bringing freshness, aroma and depth.

It is a dish built around contrast — tender lamb and char from the grill, rich curried potato beneath, and aromatic Indian spice running through the plate.

After many years on the Raval menu, it has become an established favourite.

Grilled Lamb, Curried Potato and Warming Spice

At the heart of the dish are the grilled lamb cutlets.

Cooking the lamb over intense heat develops colour and char on the outside while allowing the flavour of the meat to remain at the centre of the dish.

The cutlets are served over a base of curried potato, creating a rich, spiced foundation for the lamb.

Ginger and coriander bring freshness and aroma, while warming spice adds depth without overwhelming the meat.

The composition is deliberate: grilled lamb above, curried potato beneath, bringing together meat, spice, texture and the character of cooking over fire.

Enjoyed with rice and naan bread, it becomes a generous and satisfying expression of Raval’s approach to Indian cooking.

From the Tea Country of Darjeeling to Raval

Darjeeling occupies a distinctive place in India’s story, particularly through the tea gardens that have made the region famous around the world.

At Raval, the famous tea-growing region of Darjeeling provided the inspiration for the name of this long-standing dish.

It is not intended as a reproduction of a single traditional Darjeeling recipe. Instead, it is a Raval creation bringing together grilled lamb, curried potato and warming spice in a dish that has developed its own identity on our menu here in NewcastleGateshead.

India’s Tradition of Cooking Over Fire

Fire has played an important role in Indian cooking for generations.

Across India’s many regional traditions, grilling, high-temperature cooking and the tandoor create distinctive flavours through heat and charring.

At Raval, that relationship between food, spice and fire remains an important part of our cooking.

Darjeeling Lamb Cutlets expresses that particularly well. The char created by grilling isn't simply a finishing touch; it contributes to the flavour and character of the lamb and provides a contrast to the curried potato beneath.

A Long-Standing Raval Favourite

Some dishes arrive for a season. Others gradually become part of a restaurant’s identity.

Darjeeling Lamb Cutlets has been a Raval favourite for many years.

Its longevity reflects what we have always wanted the dish to be: generous, distinctive and centred on the combination of good ingredients, carefully judged spice and cooking over fire.

Alongside seafood, regional curries, vegetarian dishes and other Raval signatures, it represents the richer, fire-led side of the food we have served beside the Tyne Bridge since 2007.

Four Signatures, Different Stories

Raval’s signature dishes offer very different ways to discover Indian cooking.

Maska Chicken Tikka Masala brings together Delhi inspiration, Britain’s enduring relationship with curry and the heat of the tandoor.

Lobster & Mango, one of Raval’s original dishes served since 2007, explores seafood through fresh mango, delicate spice and bright citrus.

Assam Tandoori King Prawn combines charred king prawns, yoghurt and coastal spice with intense heat.

And Darjeeling Lamb Cutlets tells another story — grilled lamb, curried potato, warming spice and fire.

Together, they reflect the different ingredients, influences and cooking traditions that shape the Raval menu.

From India to the Tyne

Raval has been exploring India’s regional flavours from our home beside the Tyne Bridge between Newcastle and Gateshead since 2007.

Darjeeling Lamb Cutlets has become part of that journey.

Grilled lamb cutlets. Curried potato. Ginger. Coriander. Warming spice.
